Slower melting ice cream in pipeline, thanks to new ingredient
Childhood memories of sticky hands from melting ice cream cones could soon become obsolete, thanks to a new food ingredient. Scientists have discovered a naturally occurring protein that can be used to create ice cream that is more resistant to melting than conventional products. The protein binds together the air, fat and water in ice cream, creating a super-smooth consistency. The new ingredient could enable ice creams to keep frozen for longer in hot weather. Strathmartine project reveals Hospital Histories
The memories of people who lived and worked at Dundee’s Strathmartine Hospital have been being captured in a major heritage project, including a new documentary film which will be premiered this Friday, August 28th. Strathmartine was one of many institutions created in the nineteenth century for people with a learning disability and was closed in 2003. VFX Masters students form industry connections
While the Masters Show 2015 has been wowing visitors to the University of Dundee, one group of exhibiting students have been touring some of the UK’s top visual effects (VFX) studios to plan the next step in their careers.
